2010 Wisconsin Summer cooking classes

 

 

All classes will be held at the Northern Great lakes Visitor Center in Ashland, WI and cost $50.00  per class. Registration is required. To Register email guitlfreezonecooking@gmail.com or call Judith at 505-470-5618.

 

 

 

Freshwater Fish and Seafood.   June 26  Saturday from 12-5 PM

 

 

Learn the fundamentals and recipes like Cioppino (Italian Fish Stew), Grilled Thai Shrimp and Fish, Gravlax (cured salmon) Paella, and other mouth-watering recipes.

 

 

Knife Skills and Intro to Butchery.   June 27  Sunday from 12-5 PM

 

 

Learn and hone basic knife skills and various boning techniques as we make chicken roll-ups, fresh ground sirloin, beef consommé and learn to french some chops

 

 

 

Chilis/Southwest and Mexico July 17  Saturday from 12-5 PM

 

 

 

We will be making New Mexico red and green chili sauce to have with our enchiladas, chili rellenos, fresh salsas, smoked chipotle chili (adobo) with meatballs, and will explore the extraordinary world of moles.

 

 

 

Ultrametabolism*   Gluten Free and Dairy Free July 18  Sunday from 12-5 PM

Thai          August  14  Saturday from 12-5 PM

 

 

Learn the secrets of delicately seasoned Thai cooking as we make pork satay with peanut sauce, pad thai, cucumber relish, red and green curries, Tom Yum Gai (coconut chicken soup) and some other recipes make famous by Chef Jean-Georges Vonerichten.

 

 

 

 

Gluten Free Baking August 15  Sunday from 12-5 PM

 

 

 

We all have friends and family who have problems with Gluten. In this class you will learn how to make delicious gluten free breads, muffins and desserts including brownies and pie crusts as well as frozen desserts.  These recipes are so delicious you wonder why you relied so much on wheat flour all these years.
